Steve Gormezano is a farmer on a mission. Growing exotic, but beneficial vegetables on his Roane County farm, Steve has cultivated a desire to take "normal" agriculture to the cutting edge. His latest experiment is Jerusalem artichoke or sunchoke. The small tuberous vegetable looks like fresh ginger, crunches like a carrot, tastes sweet and nutty, and has fewer calories than the potato.

But the best aspect of sunchokes, are its health benefits to the diabetic and overweight population. The sunchokes starch converts to fructose in our bodies, fructose is a healthy fruit sugar and is okay for diabetics to ingest. This fructose or sugar is slowly released in the body, so our craving for processed sugar is greatly diminished.
