Tofu Sandwich Spread

Ingredients
  • 1 package tofu drained and mashed
  • 1/3 to 1/2 cup no cholesterol mayonnaise
  • 2 tsp. mustard
  • 1/2 tsp. minced garlic or garlic powder
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped celery
  • 3 Tbs. grated carrot
  • 2 Tbs. chopped dill pickles
  • 2 tsp. soy sauce
  • 1/2 tsp. salt and pepper (to taste)


Directions

Mix all ingredients well. Cover and refrigerate until serving time.

Serve on lettuce leaves, crackers for appetizers, or use as a sandwich filling.

This recipe has absolutely no cholesterol, is low in calories and high in fiber, vitamins, protein and minerals. In fact tofu (soybean cake) is one of the highest forms of protein available. Tofu can also be used as a meat extender by blending with ground beef or as an extender with scrambled eggs.
