The Produce Corner Recipes
The Health Salad

This delicious recipe is recommended by the American Cancer Society for its cancer risk reduction properties, including no cholesterol, high dietary fiber, low in sodium, low in calories and fat, and extremely rich in vitamin A beta carotene and vitamin C. The two main vegetables, broccoli and cauliflower, are both cruciferous as well.

Ingredients

  • 1 head fresh broccoli, chopped
  • 1 head fresh cauliflower, chopped
  • Sweet red bell pepper, chopped
  • 1-2 bunches green onions, chopped or 1 cup chopped red onion (or both)
  • 1 cup frozen or fresh peas
  • 1/2 tsp. pepper
  • 2 tsp. poppy seeds
  • 3/4 cup creamy cucumber dressing (or your favorite)


Directions

In a large mixing bowl add all chopped vegetable ingredients. Add dressing and toss thoroughly. Add salt and pepper to taste, if you wish. Blend and toss well.

Refrigerate to chill and serve.

Crunchy, refreshing, healthy and delicious. Serve in a bowl or as a side dish on a bed of leaf lettuce.

Serves 6-8.
