The Produce Corner Recipes
Sun-Dried Tomatoes

It takes approximately 17 lbs. of fresh tomatoes to make one pound of sun-dried tomatoes, consequently the tomato flavor is rich and intense. To fully utilize them, they must be reconstituted somewhat by either placing them in boiling water for 2-3 minutes, or by soaking them in hot water for 10-20 minutes. Then remove and use in salad dressings, soups, stews, sauces, on pizza, or in any dish that you want intense tomato flavor.

To store, place reconstituted sun-dried tomatoes in a jar with olive oil and crushed or finely minced fresh garlic (optional). Refrigerate and use as needed. You may prefer to chop or dice sun-dried tomatoes for many uses as opposed to leaving whole.
