Spanish Sweet Onion Sauté

Ingredients
  • 1 large Spanish Sweet, peeled and cut into slices or chunks
  • 3 assorted sweet bell peppers (red, gold, orange and/or green), cut into slices or chunks
  • 1 Tbs. olive oil
  • 1 clove garlic, crushed
  • 2 Tbs. fresh chopped dill (or 1 tsp. dried)
  • 1/4 tsp. salt (optional)
  • 1/4 tsp. pepper (optional)


Directions

Sauté crushed garlic and olive oil over medium heat. Add all the prepped peppers and onions and stir-fry or saute until the vegetables begin to get limp, but are still crunchy.

Hint: Microwave the peppers and onions on high heat in a covered container with a little water for 2-3 minutes to soften. Then add to skillet.

Season with salt and pepper to taste. Add dill (fresh or dried), toss and serve as a side dish or as a topping over hamburgers, ground steaks, regular steaks, rice or noodles.

Serves 4-6 as a side dish.
