Scallion and Sausage Potatoes

Ingredients
  • 2 cups cooked potatoes (Any potato is fine, however, for this dish small red potatoes arereally nice. Bake or microwave first, cool and then cut into slices, half slices or small pieces.)
  • 4-6 pieces of sausage (cook, drain grease on paper towels - cut or break sausages up into small pieces)
  • 2 Tbs. butter or margarine
  • 1 bunch green onions, scallions or if you're really brave... ramps (diced and minced)
  • 1/2 cup parsley (chopped fine)
  • Salt and pepper (to taste)


Directions

Melt butter or preferably margarine in a skillet or fry pan. Add green onions and sauté over medium heat.

Add potatoes and stir well. Then add sausage, salt and pepper and stir well.

Add parsley last and stir till blended throughout the home fries.

Add butter or margarine if too dry.

Serves 4-6. Excellent!
