Rhubarb

Though rhubarb is botanically a vegetable, it's so popular in sweet pies and compotes that most of us think of it as a fruit. You can buy two types of Rhubarb -- field grown or hothouse. In both varieties only the stalks are edible. Because rhubarb is so tart, it is almost always eaten cooked and sweetened with sugar. A good source of calcium and potassium, it's available February through June, peaking in May.
