Microwaving Lettuces

Cool, crisp and refreshing lettuce with its many varieties, tastes and textures, offers us another exciting opportunity for enjoying healthy and nutritious food. Microwaving is the best way to cook vegetables, so why not lettuce? Microwaving cooks the product in its own moisture contained within the product itself. Consequently, color, taste, texture and vitamins and minerals are preserved.

To prepare, simply clean and prep lettuce like you would for a salad. Place in a microwave-safe covered container (zip-lock bags work very well). Add 1/4 cup water only if the lettuce appears dry. Seal the container or bag except for one corner, so steam can escape.

For a full bag, microwave on high 8-10 minutes. Drain excess moisture and pour into a serving bowl.

Season with salt, pepper, margarine and plenty of Parmesan cheese. Add herbs if you wish. Leaf lettuce will taste like spinach. Head lettuce will taste like mild cabbage. And Romaine will have a taste of its own.
