Marinated Broccoli and Cauliflower Salad

This chilled salad combines 2 of the most popular as well as nutritious cruciferous vegetables in an incredibly delicious marinade that will be the hit of your next summer buffet or party. (Great at Christmas too!)

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 head of broccoli, cut into florets
  • 1 medium onion, diced
  • 8 mushrooms, quartered
  • 1 medium sweet red bell pepper, diced


Marinade

  • 1/2 cup vinegar (or white wine vinegar)
  • 3/4 cup vegetable oil (or olive oil)
  • 1/3 cup sugar
  • 2 Tbs. dry mustard
  • 1 tsp. salt
  • 2 Tbs. poppy seeds


Directions

In a small mixing bowl, combine all marinade ingredients and blend till sugar is dissolved. In a large mixing bowl, combine all dry ingredients. Drizzle marinade over vegetables and toss gently until all are well coated. Refrigerate and let marinate for at least 4 hours. Toss and serve.

Incredibly delicious! Serves 8 - 10.
