Ginger and Garlic Seafood Marinade

This exciting marinade combines the fragrant and pungent flavors of fresh grated ginger and crushed cloves of garlic for marinating fresh seafood for baking, broiling or charcoal grilling.

Ingredients

  • 4-5 fish steaks (halibut, shark or swordfish)
  • 1/3 cup soy sauce
  • The juice of 2-3 lemons
  • 1/4 cup vegetable oil
  • 1/4 tsp. salt
  • 2 Tbs. sugar
  • 1 tsp. fresh grated ginger (or 1 tsp. ground)
  • 1 clove fresh garlic, crushed
Directions

Blend thoroughly all ingredients, except the fish, in a mixing bowl or baking pan.

Add seafood steaks (or shrimp or scallops) and marinate 30 minutes in the refrigerator, or overnight.

For the outdoor grill, use remaining marinade as a baste. To bake in the oven, place in a baking pan with all the marinade, and bake at 350 degrees for 35-40 minutes or until steaks flake easily with a fork.
