Fresh Spinach Salad with Hot "Bacon-Less" Dressing

Ingredients
  • spinach
  • 2-3 strips of bacon
  • 2-3 tablespoons of the bacon drippings (or salad oil)
  • 2 tablespoons sugar
  • 1/3 cup tarragon vinegar (or regular vinegar)
  • hard boiled eggs (optional)
  • sliced mushrooms (optional)
  • chopped green onions (optional)
  • croutons (optional)


Directions

This recipe can be totally cholesterol free by eliminating the egg yellow from the hard boiled eggs, by substituting olive oil or regular salad for the bacon drippings and imitation bacon bits for the crumbled bacon. Either way, wilted spinach salad is delicious and a real treat.

Be sure to select spinach that is dark green and firm, not yellowing and limp. Wash well and drain thoroughly. Set aside in a large salad mixing bowl.

Fry 2-3 strips of bacon till crisp. Crumble bacon and place in mixing bowl with the spinach.

In a skillet or fry-pan, leave 2-3 tablespoons of the bacon drippings on medium heat. Add 2 tablespoons sugar to the drippings (or salad oil) plus 1/3 cup tarragon vinegar (or regular vinegar). Stir briskly till dissolved and pour over spinach.

Add sliced hard boiled eggs, sliced mushrooms, chopped green onions and croutons in any quantity you have or wish. Toss thoroughly and serve immediately.

Serves 4-6. A fabulous salad!
