Fresh Rosemary and Garlic Marinade

Rosemary is a highly flavorful and aromatic fresh herb where a little bit goes a long way. Use sparingly to enhance sauced and meat seasonings. This recipe can be adapted two ways to marinate lamb, beef or pork.

Ingredients

  • 2 Tbs. fresh minced rosemary
  • 1/3 cup olive oil
  • 1 clove garlic, crushed and chopped
  • 1/2 tsp. ground pepper
  • 1/2 tsp. seasoned salt


Directions

One method is to combine all ingredients in a small mixing bowl and pour over selected meat. Turn meat and rub marinade in thoroughly. Pierce meat with a paring knife or meat fork and allow marinade to seep into the meat. Cover and refrigerate overnight. Then roast, bake or boil as you selection of meat would require.

Another way is to pierce your meat as described above and rub your roast all over with the olive oil. Salt and pepper all over and rub in. Add crushed, minced garlic and rub in. Add rosemary and rub in all over. Wrap whole roast loosely in Saran Wrap and refrigerate overnight. Set out before cooking and let set at room temperature loosely covered for 2 hours. Cook as meat selection dictates.
