The Produce Corner Recipes Fresh Parsnips A cousin to carrots and a good source of phosphorous, iron and potassium. Fresh parsnips grow well in the cooler months because they convert more of their starch to sugar when it's cold. Select small to medium size, which are less woody inside. Prepare similar to carrots for side dishes, soups or stews. You can also serve mashed, like potatoes. Try our recipe for Mashed Parsnips. Enjoy!
