The Produce Corner Recipes Fresh Okra Okra originated from the Gold Coast of Africa and was brought to the Caribbean and southern states of American by slaves. Another name for okra is the African word gumbo, which is the name given to American dishes in which it appears, because the pods contain a clear liquid which smooths the sauce. When shopping for okra, look for crisp, bright green pods that are free from blemishes. Choose small to medium pods. Before cooking okra, wash; do not trim off stem ends unless they are woody. Pods can be cooked whole or cut in half. Boil, microwave or steam lightly in salted water. Drain, season with salt, pepper, butter and/or Parmesan cheese. You can also cut in 1/2" pieces, dip in egg batter, roll in corn meal or bread crumbs and fry in hot vegetable oil till golden brown. Drain on paper towels and serve.
