Fresh Fruit Ices-Cantaloupe Ice

Delightfully true flavors with less calories and lighter than sherbet or ice cream. Incredibly simple to make fresh fruit ices, helps cleanse the palate before the main course of can be served as a delicious dessert. Any number of fruits can be used, such as melons, peaches, kiwis, grapefruits, mangoes and oranges to name a few. Here's one you're sure to enjoy.

Ingredients

  • 2 medium cantaloupe, peeled and seeded
  • 1/2 cup sugar
  • 3 Tbs. fresh lemon juice


Directions

The day before serving, cut cantaloupe into chunks. In a covered blender or food processor at medium speed, blend chunks and remaining ingredients half at a time until smooth. Pour into a 9" baking pan. Cover with foil or plastic wrap and freeze until firm.

Let stand at room temperature about 20 minutes before serving. Stir mixture till mushy. Spoon into chilled cups or dessert dishes and serve immediately.

Yields 10 1/2 cup servings. Excellent!
