The Produce Corner Recipes Enoki Mushrooms Originally from Japan, Enoki mushrooms are now cultivated in California. This cluster of toothpick like mushrooms with small button caps taste like a combination of lemons and grapes and have virtually no calories. Primarily used as a garnish, they are outstanding floating on soups or placed artfully throughout a salad or added at the last moment to stir-fries. A good source of vitamin C and abundant in minerals, Enokis are easily prepared for usage by removing from the vacuum-sealed bag and slicing off the bottom third of the stems and discarding the roots.
