The Produce Corner Recipes
Cherimoya and Peach Soup

Ingredients
  • 2 cups chopped cherimoya
  • 1 cups chopped peaches (canned w/syrup)
  • 1 1/2 cups sour cream
  • 1/2 cup pineapple juice
  • 1/2 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup dry sherry
  • 1 cup peach liquid (from can)
  • 8 mint sprigs (optional, for garnish)
Directions

Combine cherimoyas, peaches and sour cream in a blender. Puree. Add remaining ingredients, except mint, and blend till very smooth.

Transfer to a bowl. Cover and chill thoroughly for at least two hours. Ladle into chilled bowls. Garnish with mint and serve.

Serves 8.
