Basil Vinaigrette

Fresh basil makes the difference in this true vinaigrette. Here's how.

Ingredients

  • 1 cup fresh basil
  • 1/4 cup tarragon or regular white vinegar
  • 3/4 cup olive oil
  • 1 Tbs. Dijon mustard
  • 1 clove fresh garlic
  • Salt (to taste)


Directions

In a blender or food processor, blend the garlic, vinegar, mustard and salt. Add the oil and basil and blend the mixture till emulsified.

Serve over gourmet salad or sliced tomatoes. Very distinctive, yet easy, as well as different.

Makes approximately one cup.
