"We're making a wild game burgoo. Burgoo is just a thick, hearty stew, it has ground venison, chicken, a lot of vegetables. You can use turkey, any kind of meat you like" says Chickerell This recipe is especially good with wild game, and as with any recipe you whip up for your wild game, the key is spicing it up just right. "We're using fresh thyme, rosemary, parsley, salt, pepper, oregano-these are spices everyone would have in their cupboard-absolutely. You can use banana peppers if you don't like the heat, plain red or green bell peppers. When I cook, I love fresh herbs and load it up." says Chickerell. "It is sizzling-can you smell it-it smells real good!" Good stuff you can whip up in a flash. Recipes are guidelines, not something etched in stone, so experiment a little and find what works for you, but keep one thing in mind. "Experiment with your herbs, figure out what you like the best, just season it, really season it up-that makes your dish!" says Chickerell. "It's delicious!" That's all any chef..or cook for that matter, wants to hear.
