Fruit Cake

You saw it Monday, November 27, 2000 during Eyewitness News.



Ingredients for the Fruit Mixture

  • 1/2 cup brandy or orange juice
  • 1 cup raisins
  • 1 cup currants
  • 1 cup pecans
  • 3/4 cup citron peel
  • 3/4 cup dried apricots
  • 3/4 cup dried cherries

  • Ingredients for the Batter

  • melted butter
  • 10 oz. softened butter
  • 10 oz. granulated sugar
  • 5 eggs
  • 2 tablespoons brandy or orange juice
  • grated zest of 1 orange
  • grated zest of 1 lemon
  • 6 oz. bread flour
  • 6 oz. cake flour
  • 1/2 cup of brandy or orange juice

  • Instructions

    1. Combine all the ingredients in the fruit mixture and let marinate for 24 hours.

    2. Brush melted butter inside the baking pans.

    3. Cream the softened butter and the sugar until light and fluffy. Incorporate the eggs one at a time. Add the citrus zests and the first measure of brandy.

    4. Sift the flours together. Mix the flour with sugar mixture and add the fruit. Divide between the two pans.

    5. Bake at 300 degrees for 1 hour and then lower the temperature to 275 degrees and continue to bake for thirty more minutes.
