A Perfect Way To Get Those Daily Vegetables. February 6, 2012
Ingredients
2 - 16 ounce packages of baby carrots 1 medium raw green pepper 1 medium raw purple onion 1 (10.75oz) can tomato soup 1/2 cup vinegar 1/2 cup oil 1 cup sugar 1 teaspoon Worcestershire sauce 1 teaspoon regular yellow mustard 1/8 teaspoon salt fresh ground pepper Directions Cut the baby carrots in half or threes. Boil for 5 minutes. Cut the onion and green pepper into bite size pieces. Combine the tomato soup, oil, vinegar, Worcestershire sauce, yellow mustard, salt and pepper into a pan and simmer for 15 minutes. Cool sauce and add green pepper, onion and al dente carrots.
