It's the perfect cookie for the Holidays.
Use an inch and a half cookie baller and don't compact the cookie dough too hard. Ingredients Cookies: 1 cup shortening 1/2 cup brown sugar 2 egg yolks 1 teaspoon vanilla 2 cups all-purpose flour 1/2 teaspoon salt 1-1/2 c. finely chopped nuts Buttercream Frosting: 1/2 cup butter 4 cups powdered sugar, divided 1/3 cup cream or evaporated milk 1 teaspoon vanilla Directions Mix thoroughly shortening, brown sugar, egg yolk and vanilla. Combine flour and salt and add to first mixture. Roll into 1 inch balls. Dip in slightly beaten egg whites. Roll into finely chopped walnuts or pecans. Place 1” apart on ungreased baking sheets & press thumb into the center of each cookie. Bake at 375°F until set about 10 to 12 minutes. While still slightly warm fill each thumbprint with butter cream frosting. I use the Buttercream Frosting recipe from the Charm Countryview Inn Cookbook. Make the Buttercream Frosting by creaming butter and half of the powdered sugar. Add cream and vanilla. Add remaining powdered sugar and beat until fluffy. Tips **I prefer to use cream.
