Perfect Treat For Breakfast Or Brunch

These little gems are a wonderful addition to breakfast or brunch. They are especially nice if your meal is busy with heavy flavors. These muffins are light and melt-in-your-mouth delicious.
1/3 cup shortening
1/2 cup white sugar
1 1/2 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 to 1/2 teaspoon nutmeg
Cream shortening and sugar with electric mixer. Add egg and blend into creamed mixture. In a separate bowl add together dry ingredients. Gently, using a spatula, stir in dry ingredients to creamed mixture just until blended.
Coat mini muffin tins with cooking spray and fill each muffin cup 2/3 full. Bake at 350°F for 12-15 minutes.
While still a bit warm, roll each muffin in 1/2 cup melted margarine. Then roll each muffin into a mixture of 1/2 cup white sugar and 1 teaspoon cinnamon.
