A make-ahead breakfast with seasonal fresh blueberries July 11, 2011
Make ahead breakfasts at The Miller Haus B&B are very popular with our cooks in the kitchen. They’re even more popular with our guests who spend the night. This is the perfect season for a blueberry-licious breakfast. Leftovers of this dish reheat well, just ask our boys!
Ingredients French Toast: 12 slices day-old bread 2-8oz. Philadelphia cream cheese 1 cup fresh or frozen blueberries 12 eggs 2 cup milk 1 cup maple syrup or honey Blueberry Sauce: 1 cup sugar 2 tablespoons corn starch 1 cup water 1 cup fresh or frozen blueberries 1 tablespoon butter Directions Cut bread in cubes. Place 1/2 in a 9x13 greased dish. Cube cream cheese. Place over bread. Top with blueberries and remaining bread. In a large bowl beat eggs and add milk and syrup. Mix well. Pour over bread mixture. Cover and refrigerate overnight. Remove from refrigerator for 30 minutes before baking. Cover and bake at 350°F for 30 minutes. Uncover and bake 25-30 minutes more or until golden brown. While French Toast is, baking, make the Blueberry sauce. In a small saucepan, combine sugar, cornstarch and water until smooth and bring to boil over medium heat. Cook and stir for 3 minutes. Stir in blueberries and reduce heat. Simmer 8-10 min. or until berries have just started to burst. Stir in butter until melted. Spoon over French Toast. Got Questions?
