Garden Fresh and Healthy Dip May 16, 2011
This fresh, fantastic dip reminds me a little bit of salsa. Made with garden vegetables and the addition of hominy make it unique and also healthy. I would be embarrassed if I told you how much I can eat of this yummy recipe.
Ingredients 1 can hominy - rinsed & drained 2 cans of black eyed peas - rinsed & drained 4 tomatoes- diced (I like Roma tomatoes for a firmer texture) 1 bunch of green onions (5-8) 2 jalapeno peppers - chopped 2 cloves garlic - diced 1 or 2 green peppers 1- 8oz. blended Italian dressing (I use a bottled pre-made dressing) Directions Mix all the vegetables together. Toss the hominy gently because it is soft. Refrigerate for at least 2 hours or even overnight. Tips After mixing all the ingredients in a large bowl I like to transfer it into a sealed, large Tupperware and gently flip the Tupperware to coat all the vegetables.
