These fluffy, minty cookies are heavenly treats March 7, 2011
Whoopie pies are cake-like cookies that are soft and light. Two cookies make a sandwich with filling that is fluffy and creamy.
Ingredients For the cookies 1 cup butter 2 eggs 1 cup brown sugar 1 cup white sugar 2-1/2 teaspoon soda 2 teaspoon vanilla 2 teaspoon salt 1 cup sour milk (you can use 2 T. cider vinegar added to 1 cup whole milk) 1 cup cocoa 1 cup boiling water 4 cups flour For the filling 2 egg whites, beaten 1 cup Crisco 1/4 cup flour 2 cups powdered sugar 1 teaspoon peppermint extract several drops green food coloring Directions In a mixing bowl, mix first 8 cookie batter ingredients together. Add cocoa to boiling water. Stir together until cocoa dissolves. Add to cookie mixture. Add flour, one cup at a time. Chill the dough. Drop on cookie sheets, bake at 350�F. Cookies will be puffy and slightly firm to touch on top. Cool cookies completely. Make the filling. Beat eggs whites until stiff peaks form. Add vanilla and powdered sugar. Beat shortening separately until creamy and add to egg white mixture. Spread filling between cookies. Enjoy! Tips This recipe can be made without the mint flavoring and green food coloring.
