Challenge Participant Making Strides January 27, 2012
In 2012, Eve Marcum-Atkinson is settling back into her routine of eating healthier, ordering from a local Chinese restaurant. "It's steamed rice instead of fried, so that's more nutritious. This chicken is not breaded, or covered in a sugary sauce, as in the case of say general tso's, and it's loaded with veggies."
In 2010, transformed herself by eating better and exercising regularly. She lost 50 pounds, but in 2011, she says, "I managed to gain 32 of those pounds back. So I decided, I need some group support." She's on board for Huntington's 90-day-challenge, pledging to make small changes each week in mind, body, and spirit. She says, "It doesn't cost anything. You just download the PDF that gives you a few challenges for each week, and see what you can try to do to try to meet them." So far, so good. "As of today, I've lost ten pounds since the beginning of the year!" She's added more fruits and veggies, and the more of those she eats, the less sugar and fat she craves. She also has to start the day off right. "I absolutely have to have breakfast. If I have just a nice reasonable little bowl of oatmeal, it really helps to carry me through till lunch. Even if she's eating out with friends, she's learned to make healthier choices. She checks in regularly with other challenge participants, and even blogs about her experience. She says she loves the increase in accountability and celebration of success with the challenge, and hopes to see even bigger results over the next couple months. "At the end of the 90-day-challenge, just have the spirit to continue and work towards reaching a healthier me!" We will check in with Eve to check out her progress throughout the challenge!
