Sara Moulton Sara Moulton's Biscuits

These biscuits are quick to make and are great for breakfast, brunch or as a special side for New England Clam Chowder.

Ingredients
  • 2 cups unbleached all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon table salt
  • 1 to 1 1/2 cups heavy cream
  • 2 tablespoons unsalted butter

  • Directions

    Preheat the oven to 425°F. Lightly grease a cookie sheet.

    Stir together the flour, baking powder, and salt in a large bowl. Pour in enough of the cream to just form a dough.

    On a lightly floured surface, knead the dough gently several times and divide into four equal balls. Pat out each ball to make a flat 3-inch round on the cookie sheet.

    Bake for about 20 minutes or until pale golden.

    Makes 4 big biscuits.
