Plain and Fancy Tea Cake

In the GMA Cut the Calories Cook-Off Contest

Plain and Fancy Tea Cake photo A dessert that will compliment your morning, afternoon or evening cup of tea.

Ingredients

For Batter:

  • 2 egg whites, beaten
  • 1 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1 tbsp. vanilla extract
  • 2 tbsp. extra virgin olive oil
  • 1 cup sugar
  • 1/2 cup unsweetened applesauce
  • 1 cup plain non-fat yoghurt
  • 1 1/2 cups white whole wheat flour

  • For Streak:

  • 2 tbsp. sugar
  • 2 tbsp. chopped nuts (pecans, walnuts or almonds)
  • 1 1/2 tsp. cinnamon

  • Topping:

  • Confectionery sugar

  • Directions

    1. Place all Ingredients
    for batter (except flour) in a large bowl in order given. Beat until smooth. (A whisk works fine). Fold in flour with spatula.

    2. Spray a non-stick 12-cup Bundt pan with Baker's Joy.

    3. Pour a third of the batter into prepared pan.

    4. In a small bowl, combine topping mixture with half cup of remaining. Mix well. Dollop this mixture over the first layer of batter in order to form a streak.

    5. Pour remaining batter over the streak.

    6. Bake at 350 degrees for 40 to 45 minutes. Let cool in pan for 15 minutes. Shake pan for easy removal. Turn out on cake rack.

    7. Serve warm or, cool and sprinkle with powdered sugar.

    Yields: Approximately 24 slices

    Calories: 80 calories each.

    Note: This cake contains no extra salt, has the nutrition of whole-wheat flour and gives the satisfaction of eating really delicious cake while losing weight. I serve this with green tea.
