Maple Pecan Sweet Potato PieFrom 2004 finalist, Sandra Kaufmann November 19, 2004 Sandra Kaufmann, was a finalist of Emeril Lagasse's 2004 "Pie of Emeril's Eye" recipe contest on Good Morning America. Be sure to try all of the finalists pies: Guy Pie, Pumpkin Streusel Pie, Sinful Apple Pie, Four Berry Pie and Maple Pecan Sweet Potato Pie.
IngredientsDirections Preheat oven to 350°F. Line a 9 1/2-inch glass pie plate with pie crust. Flute edges and cover with aluminum foil. In a large bowl, beat eggs until well blended with wire whisk. Add all remaining ingredients, except pecans. Mix well with a wire whisk. Add pecans and stir until blended. Pour into pie crust. Bake for one hour or until knife inserted in center comes out clean.
