Joan Lunden Joan Lunden's Peach Crisp

Former Good Morning America co-host Joan Lunden is one of the most well-known working mothers in America. Her top priority has been to make sure that her children grow up happy and healthy, and her new book, 'Growing Up Healthy: A Complete Guide to Childhood Nutrition, Birth Through Adolescence', co-written with Dr. Myron Winick, gives readers strategies and tips to do just that. It features recipes that she says will boost a child's brainpower, help them to grow strong, and protect them from disease.

Her recipe for Peach Crisp is great tasting and healthy too!

Ingredients
  • 3 cups sliced fresh, frozen, or canned (drained) peaches
  • 1/2 cup brown sugar, packed
  • 1/2 cup flour
  • 1/2 cup oatmeal
  • 1 1/2 teaspoon cinnamon
  • 1/4 cup soft butter (1/2 stick)

  • Directions

    Preheat oven to 375°F.

    Put three cups of peaches in the bottom of a 10-by-6-inch pan or 8-by-8-inch baking pan.

    In a large bowl, mix the brown sugar, flour, oatmeal and cinnamon. Then, using an electric mixer cut the soft butter evenly into the dry ingredients.

    Sprinkle the mixture evenly over the fruit. If you prefer more topping, you can make two thin layers of fruit with two layers of topping.

    Bake at 375°F around 40 minutes to 45 minutes, or until the top is slightly browned. The fruit should feel tender when you test with a toothpick.

    If peaches aren't in season, you can use apples, pears, blueberries, blackberries or fresh plums.
