Charlie Gibson's Sandwich Wraps From GMA co-anchor Charlie Gibson 1997 Charlie has a tough act to follow after that outstanding Turkey Lasagna Spencer cooked yesterday and Joan's tortilla chicken soup. He has been "wrapping" all morning!
Ingredients Directions 1. Charlie, I hear your dish is a hot new trend - - what is it? I wanted to show you all how to make a wrap sandwich - this is something my wife and I having started making in the past few months and we just love to have for dinner. It is a healthy, yet filling and satisfying vegetarian meal. 2. Let's get started - where do we begin. Heat 1 tbsp extra virgin olive oil in a hot skillet. Add 2 large sweet red pepper. 1/2 Yellow red pepper, 1/2 orange pepper - seeded, cored, and cut in strips - saute until soft. Remove from the heat and sprinkle with 1/2 tbsp sherry vinegar. 3. What are wraps? Tortillas are easily available in supermarkets. There are flour tortilas and they are available in many different flavors: white, whole wheat, jalapeno, sesame, spinach, and tomato. 4. How do you "fill" the wrap? Spread 2 tbsp goat cheese on the flour tortillas. Charlie scatters 1 tbsp chopped sun dried tomatoes on his two tortillas. He divides the sauted peppers on top of tortilla, making sure they are in the center of the tortilla. Toss 1 bunch of arugula lettuce with 2 tbsp of extra virgin olive oil and 1/2 tbsp of sherry vinegar. Place tossed arugula (or any other variety of lettuce that you choose) in the center of tortilla. 5. How do you "wrap" the wrap. This is the most important and difficult part! Fold about of inch of the torilla from top and bottom over the filling. Turn the wrap sideways and roll it up. Wrap in wax paper or tin foil. 6. Is it served hot or cold? I find that you really get the most flavor out of low-fat food, including this wrap when it is served and eaten at room temperature.
