Charlie's Enchilada CasseroleFrom Charles Gibson October 7, 2002 You're used to seeing Emeril or Wolfgang Puck wearing the chef's hats on Good Morning America, but all this week, we're pulling a switcheroo, bringing you some of our favorite family recipes, for the "Good Morning America Family Cook-Off."
Our first recipe has been in the Gibson household for 20 years. The family borrowed it from a friend, Mary Corkran, of Washington, D.C., and have made it one of their favorite meals. If you like the spicy, cheesy taste of Doritos, you might want to try this simple dishIngredients Directions For the topping, set aside sour cream, 1/2 cup of the grated cheese, and 1/3 of the Doritos bag. Grate a small onion and measure 2 tablespoons and set aside. Take remaining 6-cups Doritos and crumble with your hands into mixing bowl. Mix the onion, and all the other ingredients, except those for the topping, and place into an 8 1/2 x 11-inch casserole dish. Bake for 20 minutes at 375 F. Remove casserole from oven. Spread on sour cream, cover with Doritos, and sprinkle 1/2 cup cheese. Bake for an additional 5 minutes and serve.
